I grew up in Germany (a LOOONG time ago) and I hated spinach -- it was cooked to death and resembled grey-green slime. It was only when I traveled around India from 1970 to 71 that I learned to appreciate and love spinach. Saag-alu was one of my favorite dishes! Thank you for reminding me!
There are other vegetables I hated as a kid, until I tasted the rightly cooked, fresh product. I was surprised to be delighted by Brussels sprouts served at a business party in 2017. Later my family in law offered a basket of vegetables for Christmas (a cliché gift for a vegan, right?), and it included fresh salsify - which was awesome, nothing to compare with what I remembered from my childhood!
I had to look up Salsify -- then thought it was the same as Japanese Gobo -- no, that's burdock ;). But I agree, it's nice to add the vegetables one hated as a kid. Rightly cooked is the key.
